I try to follow a paleo diet 80% of the time and that involves a lot of meals at home. Unfortunately, I'm a terrible cook... but I've been disguising my lack of cooking skills for a few years thanks to my crockpot. I dread any recipe that doesn't involve the crockpot because I know that it will probably be dry and need a lot of condiments or cheese. But, the crockpot takes preparation and time in the AM to throw all the ingredients in. Ugh. So, when I found the Korean Beef recipe below, it quickly became part of my weekly dinner rotation. It's easy, it's tasty, comes together in 20 minutes, and it has real flavor!
1 pounds grass-fed ground beef
.5 tablespoon toasted sesame oil (Kinda pricey, but lasts SO long.)
1 shake of grated ginger (Located in the spices right next to paprika and salt!)
.5 teaspoon red pepper flakes (I read crushed red pepper spikes your metabolism in a magazine years ago so I double this when I make it. Haha!)
.5 teaspoon salt
.5 teaspoon garlic powder
.5 teaspoon onion powder
1/4 cup coconut aminos (This is sold for cheap at Trader Joe's now! Much healthier alternative to soy sauce.)
- Add the ground beef and sesame oil to a large skillet and cook on medium heat.
- Add the ginger, red pepper, salt, garlic powder, and onion powder and continue cooking until the meat is browned. About 8 minutes.
- Add the coconut aminos and cook for another 5 minutes.
- Serve over white rice or cauliflower rice. I also love to use the juice as a dressing and put it over a giant bowl of arugula.
